Note: As of 12 May 2018, the images in this post are nowhere to be seen. I’m currently debating whether to dig around in an external hard drive to find them or to surrender them to the universe. My photography was so bad at the time that the greater forces of my blog may be trying to do me a favor.
This is seriously one of the easiest recipes I’ve ever tried. Consisting of seven ingredients, this berry cobbler can be thrown together in a matter of minutes. Toss it in the oven for an hour, and you’ve got a great, summery dessert, literally bursting with berry flavor.
Let’s get cooking!
In a large bowl, mix together flour, baking soda, and sugar, whisking in some milk.
Super-duper easy.
Mix in some melted butter and then pour the batter in a baking dish.
Are you realizing how easy this is?!
Sprinkle some blueberries and blackberries on top of the batter.
We’re almost done!
Dust the berries with some sugar and then bake!
That’s it!
Let is cool for a while and then top with whipped cream, preferably homemade, although I won’t begrudge you the kind in a spray can.
Oh, you want to know how to make homemade whipped cream? How thoughtless of me. Allow me to show you…
Simply combine heavy cream, powdered sugar, and vanilla in a medium-sized bowl.
This is actually very easy to make.
Using a hand mixer or stand mixer, whip the ingredients until they form soft peaks.
Bask in my artistic achievements via Paint. It took me way too much time.
And there you have it! Homemade whipped cream for your warm, bubbly, berry cobbler.
Give it a try yourself!
Summertime Berry Cobbler with Homemade Whipped Cream
Recipe adapted from “Blackberry Cobbler #1” by The Pioneer Woman
Cobbler
1 stick Butter
1 ¼ cup Sugar
1 cup Flour
1/2 teaspoon Baking Soda
1 cup Milk
1 cup Blackberries
1 cup Blueberries
Whipped Cream
1 cup Heavy Cream
¼ cup Powdered Sugar
1 teaspoon Vanilla
Preheat the oven to 350 degrees and grease a baking dish.
Melt the butter in the microwave. In a large bowl, mix 1 cup of sugar, plus the flour and baking soda before whisking in the milk. Pour in the melted butter and stir to combine.
Pour the batter into the baking dish. Rinse blackberries and blueberries and pat dry, then sprinkle them on top of the batter. Dust the top with ¼ cup of sugar.
Bake for 1 hour, until lightly browned and bubbly. 10 minutes before it’s done, sprinkle an additional 1/8 cup of sugar over the top.
While the cobbler is baking, make the whipped cream.
In a medium-sized bowl, using a mixer of some sort, whip together heavy cream, powdered sugar, and vanilla until it forms soft peaks.
Take the cobbler out of the oven and allow to slightly cool before serving warm with copious amounts of whipped cream.
You just made my day, I love simple recipes that I can make on the weekdays. There have been so many cobbler recipes tempting me out there lately, this is perfect!
Thanks! I highly, highly recommend this recipe, but be forewarned: once you start eating it, it's verrry hard to stop!
